This rich and complex dessert wine was made with late harvested Chardonnay picked at 29.5 brix (percent sugar). The juice was then partly frozen and racked off the ice to leave a concentrated juice of 36 brix at the beginning of fermentation. Very complex and rich in flavor with notes of orange zest, pineapple, and mango.
